Chocolate Sauce

Notes Cocoa powder gives this sauce a very chocolately taste. "Lite" maple syrup gives a silky texture. It's hard to believe there is practically no butter in the sauce. Use this on low-fat ice cream or yogurt or as a garnish for the fruit desserts in this section.

Ingredients

1/2 cup sugar

1/2 cup water

1/3 cup cocoa powder

1/3 cup light maple syrup

1 teaspoon vanilla extract

1 tablespoon light butter

Preparation
Combine sugar, water, and cocoa in a small saucepan and bring to a boil over medium-high heat. Stir frequently to avoid lumps. Reduce the heat and simmer for about 2 minutes.

Add maple syrup, vanilla, and butter and cook, stirring constantly, for about 2 minutes. Cool and store in a covered container.

Makes 3/4 cups
