Joan Van Ark - Pasta with Pesto Sauce and Broccoli

Notes It takes 2,500 gallons of water to produce a pound of beef compared to 25 gallons for a pound of wheat. For every 40 gallons of water a day used to produce a meat-eater's diet, a vegetarian diet uses 3. One acre of land can produce 165 pounds of beef or 20,000 pounds of potatoes.

Ingredients

1 8-ounce stalk broccoli

1 pound fresh pasta

2 garlic cloves, peeled

3/4 ounce Ann's* pine nuts

1/2 teaspoon crushed red pepper

1/2 teaspoon black pepper

1 tablespoon olive oil

3 tablespoons water

2 ounces grated fat-free parmesan cheese

1/2 teaspoon salt

Preparation
Steam broccoli until barely tender. Drop pasta into boiling water, cook until al dente, and drain. Transfer broccoli to blender or food processor along with Parmesan cheese, garlic, pine nuts, salt and pepper. While machine is running, add olive oil slowly until thoroughly blended. Thin with up to 3 tablespoons water, if too thick. Toss with steaming-hot pasta.
