Witch on a Stick

1 box orange cake mix, 2-layer-size

1 cup orange juice

1/3 cup nonfat or light sour cream or yogurt

1 egg

3 large egg whites or 6 tablespoons fat-free egg substitute

Nonstick cooking spray

Assorted decorations

Popsicle sticks (or similar)

24 chocolate ice-cream cones (or similar)

1 can low-fat chocolate frosting


Preheat oven to 350°F. Prepare the cake mix according to the directions on the box except use orange juice instead of the water called for and nonfat sour cream instead of the oil, and 1 egg and egg whites or egg substitute instead of the three whole eggs normally called for. Coat nonstick cupcake pans with nonstick cooking spray. Fill a cupcake pan until two thirds full. Bake for 15 to 18 minutes or until cupcakes test done.

Note: Depending on the age or development of your child, your child can help you measure or pour in the orange juice and sour cream. Older children may also help you ladle the cupcake batter into the cupcake pans.


When the cupcakes have cooled, your child can decorate the tops of the cupcakes as the witches' faces using decorations listed. Insert a Popsicle stick or similar where the witch's neck would be. Your child can add chocolate frosting where the witch's hair would be using a spoon or plastic knife. Your child can decorate the chocolate cones as witch's hats using decorator frosting (in tubes) and any other decorations you have selected. When finished, help your child set the hats firmly on the cupcakes where the hat would be in relation to the face.

Note: To store or transport "witches on a stick," you can make holes in the bottom of a shoe box, flip it over, and push in the sticks.
